Japanese spinach dressed with a nutty sesame-soy sauce, served cool or at room temperature as a compact bento-style side.

Ingredients

  • 1 lb spinach
  • 3 tbsp sesame seeds, toasted
  • 1 1/2 tbsp soy sauce
  • 2 tsp granulated sugar
  • 1 tsp rice vinegar

Directions

  1. 1Bring a large pot of water to a boil and blanch spinach 30–45 seconds until just wilted.
  2. 2Transfer immediately to cold water, drain, and squeeze firmly in handfuls to remove as much water as possible.
  3. 3Grind toasted sesame seeds until coarse, then mix with soy sauce, sugar, and rice vinegar.
  4. 4Cut the squeezed spinach into 2-inch lengths and toss with the sesame dressing.
  5. 5Serve cool or at room temperature.

💡 Squeeze the blanched spinach very dry before dressing; trapped water dilutes the sesame sauce and makes the dish taste flat.
