Gong Bao Shrimp

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1-2 teaspoons red chili flakes
  • 1 red bell pepper, diced
  • 4 green onions, cut into 1-inch pieces
  • 3/4 cup roasted peanuts

Directions

  1. 1Mix soy sauce, rice vinegar, and sugar in a small bowl; set aside.
  2. 2Heat oil in a large wok or skillet over high heat until shimmering.
  3. 3Add shrimp and cook for 2-3 minutes per side until pink; transfer to a plate.
  4. 4Add garlic, ginger, and chili flakes to the wok and cook for 30 seconds until fragrant.
  5. 5Add bell pepper and cook for 2 minutes, stirring frequently.
  6. 6Return shrimp to wok, pour in sauce, and toss to coat evenly.
  7. 7Add green onions and peanuts, toss for another minute until heated through.
  8. 8Serve immediately over steamed rice.
