Gong Bao Shrimp

Ingredients
- •1 lb large shrimp, peeled and deveined
- •3 tablespoons soy sauce
- •2 tablespoons rice vinegar
- •1 tablespoon sugar
- •2 tablespoons vegetable oil
- •3 cloves garlic, minced
- •1 tablespoon fresh ginger, minced
- •1-2 teaspoons red chili flakes
- •1 red bell pepper, diced
- •4 green onions, cut into 1-inch pieces
- •3/4 cup roasted peanuts
Directions
- 1Mix soy sauce, rice vinegar, and sugar in a small bowl; set aside.
- 2Heat oil in a large wok or skillet over high heat until shimmering.
- 3Add shrimp and cook for 2-3 minutes per side until pink; transfer to a plate.
- 4Add garlic, ginger, and chili flakes to the wok and cook for 30 seconds until fragrant.
- 5Add bell pepper and cook for 2 minutes, stirring frequently.
- 6Return shrimp to wok, pour in sauce, and toss to coat evenly.
- 7Add green onions and peanuts, toss for another minute until heated through.
- 8Serve immediately over steamed rice.
