  • 1 lb fresh gooseberries, topped and tailed
  • 3 tablespoons sugar
  • 2 tablespoons water
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. 1Place gooseberries, sugar, and water in a saucepan over medium heat, stirring occasionally until berries soften and break down, about 8-10 minutes.
  2. 2Press the cooked gooseberries through a fine sieve to create a smooth purée, discarding any seeds and skins.
  3. 3In a separate bowl, whip the heavy cream with powdered sugar, vanilla extract, and salt until soft peaks form.
  4. 4Gently fold the gooseberry purée into the whipped cream until just combined, creating a rippled effect.
  5. 5Divide into serving glasses and chill until ready to serve.
