Gougères
Light and airy cheese-filled choux pastry puffs that are crispy on the outside and tender within.

Ingredients
- •1 cup water
- •7 tablespoons butter
- •1 teaspoon salt
- •1/4 teaspoon cayenne pepper
- •1 cup all-purpose flour
- •4 large eggs
- •1 1/2 cups grated Gruyère cheese
- •2 tablespoons grated Parmesan cheese
Directions
- 1Preheat oven to 425°F. In a saucepan, bring water, butter, salt, and cayenne pepper to a boil over medium heat.
- 2Remove from heat and stir in flour until the mixture forms a ball.
- 3Let cool for 2 minutes, then beat in eggs one at a time until fully incorporated. Fold in Gruyère cheese.
- 4Using a pastry bag or spoon, pipe or drop walnut-sized portions onto parchment-lined baking sheets, spacing them 2 inches apart.
- 5Sprinkle with Parmesan cheese and bake for 25-30 minutes until puffed and golden brown.
- 6Serve warm or at room temperature.
