Ingredients

  • 1 lb ground beef
  • 6 large eggs
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/2 medium red onion, diced
  • 1/2 cup canned tomatoes, drained
  • 2 tbsp olive oil
  • 2 tbsp parsley, fresh, chopped

Directions

  1. 1Heat olive oil in a large oven-safe skillet over medium-high heat.
  2. 2Sauté red onion 2 minutes until softened and lightly golden.
  3. 3Add ground beef, season with salt, pepper, and oregano; cook until browned.
  4. 4Stir in canned tomatoes and olives; simmer 3 minutes to meld flavors.
  5. 5Make 6 wells in the mixture and crack one egg into each well.
  6. 6Cover and cook 5 minutes until egg whites are set but yolks stay runny.
  7. 7Top with crumbled feta and parsley; serve straight from the skillet.

💡 Cook the beef before adding eggs to this Greek skillet, then reduce the heat; high heat that browns meat well can toughen eggs almost immediately.
