Greek Keftedes (Greek Meatballs)

Ingredients

  • 1 lb ground beef
  • 1/2 cup crumbled feta cheese
  • 1/3 cup breadcrumbs
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • to taste salt and pepper

Directions

  1. 1Mix ground beef, feta, breadcrumbs, mint, parsley, egg, half the garlic, salt, and pepper in a bowl until combined.
  2. 2Shape mixture into 16-20 meatballs and place on a plate.
  3. 3Heat olive oil in a large skillet over medium-high heat and brown meatballs on all sides, about 8 minutes total; transfer to a plate.
  4. 4Add remaining garlic to the skillet and cook for 30 seconds until fragrant.
  5. 5Pour in diced tomatoes with juices, add oregano, salt, and pepper, then stir well.
  6. 6Return meatballs to skillet and simmer over medium heat for 12-15 minutes until cooked through and sauce thickens.
  7. 7Serve hot with crusty bread or over rice.
