Greek Keftedes (Greek Meatballs)
Juicy herb-infused meatballs with feta and mint, served in a tangy tomato sauce.

Ingredients
- •1 lb ground beef
- •1/2 cup crumbled feta cheese
- •1/3 cup breadcrumbs
- •1/4 cup fresh mint, chopped
- •1/4 cup fresh parsley, chopped
- •1 large egg
- •3 cloves garlic, minced
- •1 can (14.5 oz) diced tomatoes
- •2 tbsp olive oil
- •1 tsp dried oregano
- •to taste salt and pepper
Directions
- 1Mix ground beef, feta, breadcrumbs, mint, parsley, egg, half the garlic, salt, and pepper in a bowl until combined.
- 2Shape mixture into 16-20 meatballs and place on a plate.
- 3Heat olive oil in a large skillet over medium-high heat and brown meatballs on all sides, about 8 minutes total; transfer to a plate.
- 4Add remaining garlic to the skillet and cook for 30 seconds until fragrant.
- 5Pour in diced tomatoes with juices, add oregano, salt, and pepper, then stir well.
- 6Return meatballs to skillet and simmer over medium heat for 12-15 minutes until cooked through and sauce thickens.
- 7Serve hot with crusty bread or over rice.
