Grilled Fish Salad

Ingredients
- •2 fillets (6 oz each) white fish (cod, halibut, or tilapia)
- •6 cups mixed salad greens
- •1 cup cherry tomatoes, halved
- •1/2 cucumber, sliced
- •1/4 cup red onion, thinly sliced
- •3 tablespoons extra virgin olive oil
- •2 tablespoons fresh lemon juice
- •1 clove garlic, minced
- •to taste salt and black pepper
- •1/4 cup fresh parsley, chopped
Directions
- 1Preheat grill to medium-high heat and lightly oil the grates.
- 2Season fish fillets with salt, pepper, and half the parsley on both sides.
- 3Grill fish for 4-5 minutes per side until opaque and flaky.
- 4Whisk together olive oil, lemon juice, minced garlic, salt, and pepper to make vinaigrette.
- 5Combine greens, tomatoes, cucumber, and red onion in a large bowl and toss with vinaigrette.
- 6Divide salad between plates and top each with a grilled fish fillet, then garnish with remaining parsley.
