Grilled Fish Salad

Ingredients

  • 2 fillets (6 oz each) white fish (cod, halibut, or tilapia)
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • to taste salt and black pepper
  • 1/4 cup fresh parsley, chopped

Directions

  1. 1Preheat grill to medium-high heat and lightly oil the grates.
  2. 2Season fish fillets with salt, pepper, and half the parsley on both sides.
  3. 3Grill fish for 4-5 minutes per side until opaque and flaky.
  4. 4Whisk together olive oil, lemon juice, minced garlic, salt, and pepper to make vinaigrette.
  5. 5Combine greens, tomatoes, cucumber, and red onion in a large bowl and toss with vinaigrette.
  6. 6Divide salad between plates and top each with a grilled fish fillet, then garnish with remaining parsley.
