Grilled Flank Steak with Chimichurri and Vegetables

Ingredients
- •1.5 lbs flank steak
- •1 cup fresh parsley
- •1/4 cup fresh oregano
- •4 cloves garlic, minced
- •1/2 cup olive oil
- •3 tablespoons red wine vinegar
- •1/2 teaspoon red pepper flakes
- •2 zucchini, sliced lengthwise
- •2 bell peppers, quartered
- •to taste salt and black pepper
Directions
- 1Combine parsley, oregano, garlic, olive oil, vinegar, and red pepper flakes in a bowl to make chimichurri sauce. Reserve half for serving.
- 2Season flank steak with salt and pepper, then coat with half the chimichurri. Let marinate for 15 minutes.
- 3Preheat grill to medium-high heat. Brush zucchini and bell peppers with oil, season with salt and pepper.
- 4Grill steak for 4-5 minutes per side for medium-rare. Transfer to a cutting board and rest for 5 minutes.
- 5Grill vegetables for 3-4 minutes per side until charred and tender.
- 6Slice steak against the grain, arrange with vegetables on a platter, and drizzle with reserved chimichurri sauce before serving.
