Grilled Flank Steak with Chimichurri and Vegetables

Ingredients

  • 1.5 lbs flank steak
  • 1 cup fresh parsley
  • 1/4 cup fresh oregano
  • 4 cloves garlic, minced
  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1/2 teaspoon red pepper flakes
  • 2 zucchini, sliced lengthwise
  • 2 bell peppers, quartered
  • to taste salt and black pepper

Directions

  1. 1Combine parsley, oregano, garlic, olive oil, vinegar, and red pepper flakes in a bowl to make chimichurri sauce. Reserve half for serving.
  2. 2Season flank steak with salt and pepper, then coat with half the chimichurri. Let marinate for 15 minutes.
  3. 3Preheat grill to medium-high heat. Brush zucchini and bell peppers with oil, season with salt and pepper.
  4. 4Grill steak for 4-5 minutes per side for medium-rare. Transfer to a cutting board and rest for 5 minutes.
  5. 5Grill vegetables for 3-4 minutes per side until charred and tender.
  6. 6Slice steak against the grain, arrange with vegetables on a platter, and drizzle with reserved chimichurri sauce before serving.
