Grilled Lamb Chops with Chermoula

- •8 lamb chops (about 2 inches thick)
- •1 cup fresh cilantro
- •1/2 cup fresh parsley
- •4 cloves garlic, minced
- •1 lemon, juiced
- •1/2 cup olive oil
- •1 teaspoon ground cumin
- •1/2 teaspoon paprika
- •1/4 teaspoon cayenne pepper
- •1 teaspoon salt
- •1/2 teaspoon black pepper
Directions
- 1Blend cilantro, parsley, garlic, lemon juice, olive oil, cumin, paprika, cayenne, salt, and pepper in a food processor until smooth to create the chermoula sauce.
- 2Place lamb chops in a shallow dish and coat generously with chermoula, reserving 1/4 cup for serving. Marinate for at least 15 minutes at room temperature or up to 4 hours in the refrigerator.
- 3Preheat grill to high heat and oil the grates.
- 4Grill lamb chops for 3-4 minutes per side for medium-rare, or until desired doneness is reached.
- 5Let rest for 5 minutes, then drizzle with reserved chermoula and serve immediately.
