Grilled Lamb Ribs with Chermoula

Ingredients

  • 2 kg lamb ribs
  • 1 cup fresh cilantro, chopped
  • ½ cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Directions

  1. 1Combine cilantro, parsley, garlic, cumin, paprika, cayenne, lemon juice, and olive oil in a bowl to create the chermoula marinade.
  2. 2Pat the lamb ribs dry and season with salt and pepper.
  3. 3Coat the ribs generously with the chermoula marinade, rubbing it into all sides. Marinate for at least 20 minutes, or up to 4 hours in the refrigerator.
  4. 4Preheat the grill to medium-high heat and oil the grates.
  5. 5Grill the ribs for 12-15 minutes per side, turning occasionally, until they develop a charred crust and the meat is tender and cooked through.
  6. 6Let the ribs rest for 5 minutes before serving with extra chermoula drizzled on top.
