Grilled Lamb Ribs with Chermoula

Ingredients
- •2 kg lamb ribs
- •1 cup fresh cilantro, chopped
- •½ cup fresh parsley, chopped
- •4 cloves garlic, minced
- •2 teaspoons ground cumin
- •1 teaspoon paprika
- •¼ teaspoon cayenne pepper
- •¼ cup lemon juice
- •¼ cup olive oil
- •1 teaspoon salt
- •½ teaspoon black pepper
Directions
- 1Combine cilantro, parsley, garlic, cumin, paprika, cayenne, lemon juice, and olive oil in a bowl to create the chermoula marinade.
- 2Pat the lamb ribs dry and season with salt and pepper.
- 3Coat the ribs generously with the chermoula marinade, rubbing it into all sides. Marinate for at least 20 minutes, or up to 4 hours in the refrigerator.
- 4Preheat the grill to medium-high heat and oil the grates.
- 5Grill the ribs for 12-15 minutes per side, turning occasionally, until they develop a charred crust and the meat is tender and cooked through.
- 6Let the ribs rest for 5 minutes before serving with extra chermoula drizzled on top.
