Grilled Lamb with Mint and Roasted Potatoes

Ingredients
- •8 lamb chops (about 2 inches thick)
- •1.5 lbs baby potatoes, halved
- •3 tablespoons olive oil
- •4 cloves garlic, minced
- •2 tablespoons fresh mint, chopped
- •2 tablespoons fresh rosemary, chopped
- •1 lemon juiced
- •1 teaspoon salt
- •½ teaspoon black pepper
- •½ cup fresh mint leaves
- •¼ cup plain yogurt
Directions
- 1Preheat oven to 400°F. Toss potatoes with 2 tablespoons olive oil, salt, and pepper, then spread on a baking sheet and roast for 25-30 minutes until golden and tender.
- 2While potatoes roast, combine 1 tablespoon olive oil, minced garlic, chopped mint, rosemary, lemon juice, salt, and pepper to create the marinade.
- 3Pat lamb chops dry and coat thoroughly with the marinade. Let rest for 10 minutes.
- 4Heat a grill or grill pan to high heat. Grill lamb chops 3-4 minutes per side for medium-rare, or longer depending on thickness and preference.
- 5Make mint sauce by whisking together yogurt, fresh mint, lemon juice, salt, and pepper.
- 6Serve grilled lamb chops alongside roasted potatoes with mint sauce on the side.
