Grilled Octopus with Lemon and Garlic

Ingredients

  • 2 pounds fresh octopus, cleaned
  • 1 cup olive oil
  • 6 cloves garlic, minced
  • 2 lemons, halved
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon red wine vinegar

Directions

  1. 1Bring a large pot of salted water to boil and add the octopus. Simmer for 30-40 minutes until tender, then drain and cool.
  2. 2Cut the cooked octopus into manageable pieces, leaving tentacles mostly intact.
  3. 3In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, salt, pepper, and red wine vinegar to make the marinade.
  4. 4Toss octopus pieces with the marinade and let sit for 10 minutes.
  5. 5Preheat grill to medium-high heat and lightly oil the grates.
  6. 6Grill octopus pieces for 2-3 minutes per side until lightly charred and heated through.
  7. 7Transfer to a serving plate, drizzle with remaining marinade, and garnish with fresh parsley and lemon wedges.
