Grilled Octopus with Lemon and Garlic

Ingredients
- •2 pounds fresh octopus, cleaned
- •1 cup olive oil
- •6 cloves garlic, minced
- •2 lemons, halved
- •1 tablespoon salt
- •1 teaspoon black pepper
- •1 teaspoon dried oregano
- •2 tablespoons fresh parsley, chopped
- •1 tablespoon red wine vinegar
Directions
- 1Bring a large pot of salted water to boil and add the octopus. Simmer for 30-40 minutes until tender, then drain and cool.
- 2Cut the cooked octopus into manageable pieces, leaving tentacles mostly intact.
- 3In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, salt, pepper, and red wine vinegar to make the marinade.
- 4Toss octopus pieces with the marinade and let sit for 10 minutes.
- 5Preheat grill to medium-high heat and lightly oil the grates.
- 6Grill octopus pieces for 2-3 minutes per side until lightly charred and heated through.
- 7Transfer to a serving plate, drizzle with remaining marinade, and garnish with fresh parsley and lemon wedges.
