Grilled Pork Chops with Apple and Brussels Sprouts

Ingredients
- •4 bone-in pork chops (1 inch thick)
- •1 lb Brussels sprouts, halved
- •2 apples, cored and sliced
- •3 tablespoons olive oil
- •2 cloves garlic, minced
- •1 teaspoon dried thyme
- •1 tablespoon balsamic vinegar
- •to taste salt and pepper
Directions
- 1Season pork chops generously with salt, pepper, and thyme. Let sit at room temperature for 10 minutes.
- 2Toss Brussels sprouts and apples with 2 tablespoons olive oil, garlic, salt, and pepper on a sheet pan. Roast at 400°F for 15 minutes.
- 3Heat grill to medium-high heat and oil the grates. Grill pork chops for 6-7 minutes per side until internal temperature reaches 145°F.
- 4Remove vegetables from oven and drizzle with balsamic vinegar. Stir and roast for another 5 minutes until Brussels sprouts are caramelized.
- 5Let pork chops rest for 3 minutes, then serve alongside the roasted apples and Brussels sprouts.
