Ingredients

  • 1.5 lbs pork tenderloin
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lb mixed vegetables (bell peppers, zucchini, carrots, red onion), chopped
  • 1 tablespoon balsamic vinegar

Directions

  1. 1Preheat grill to medium-high heat and oven to 400°F. Mix olive oil, garlic, rosemary, thyme, salt, and pepper to create a marinade.
  2. 2Rub the pork tenderloin generously with the herb marinade and let sit for 10 minutes.
