Grilled Salmon with Lemon Butter

Ingredients

  • 4 salmon fillets (6 oz each)
  • 4 tablespoons unsalted butter
  • 2 lemons
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Directions

  1. 1Preheat grill to medium-high heat (about 400°F) and lightly oil the grates.
  2. 2Pat salmon fillets dry and brush with olive oil, then season both sides with salt and pepper.
  3. 3Place salmon skin-side up on the grill and cook for 4-5 minutes, then flip and cook skin-side down for another 3-4 minutes until cooked through.
  4. 4While salmon cooks, melt butter in a small saucepan over medium heat, add minced garlic, and cook for 1 minute until fragrant.
  5. 5Remove from heat and stir in lemon juice (from 1½ lemons), fresh parsley, and dill into the butter.
  6. 6Transfer grilled salmon to serving plates, spoon lemon butter sauce over the fillets, and garnish with lemon slices and extra herbs if desired.
