Grilled Shrimp Pasta Primavera

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound pasta (linguine or penne)
  • 2 cups cherry tomatoes
  • 2 cups zucchini, sliced
  • 1 cup asparagus, cut into 2-inch pieces
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon red pepper flakes
  • to taste Salt and black pepper
  • 1/4 cup fresh basil, chopped

Directions

  1. 1Bring a large pot of salted water to boil and cook pasta according to package directions; drain and set aside.
  2. 2Preheat grill to medium-high heat. Toss shrimp with 2 tablespoons olive oil, salt, and pepper, then grill for 2-3 minutes per side until pink and cooked through.
  3. 3In a large skillet, heat remaining olive oil over medium heat, add garlic and red pepper flakes, and sauté for 30 seconds until fragrant.
  4. 4Add zucchini and asparagus to the skillet and cook for 4-5 minutes until tender-crisp, then add cherry tomatoes and cook for 2 minutes.
  5. 5Add cooked pasta and grilled shrimp to the vegetable mixture, toss gently with lemon juice, and cook for 1 minute until heated through.
  6. 6Season with salt and pepper, top with fresh basil, and serve immediately.
