Grilled Shrimp Pasta Primavera
Succulent grilled shrimp tossed with al dente pasta and fresh seasonal vegetables in a light lemon-garlic sauce.

Ingredients
- •1 pound large shrimp, peeled and deveined
- •1 pound pasta (linguine or penne)
- •2 cups cherry tomatoes
- •2 cups zucchini, sliced
- •1 cup asparagus, cut into 2-inch pieces
- •4 cloves garlic, minced
- •1/4 cup extra virgin olive oil
- •2 tablespoons fresh lemon juice
- •1/2 teaspoon red pepper flakes
- •to taste Salt and black pepper
- •1/4 cup fresh basil, chopped
Directions
- 1Bring a large pot of salted water to boil and cook pasta according to package directions; drain and set aside.
- 2Preheat grill to medium-high heat. Toss shrimp with 2 tablespoons olive oil, salt, and pepper, then grill for 2-3 minutes per side until pink and cooked through.
- 3In a large skillet, heat remaining olive oil over medium heat, add garlic and red pepper flakes, and sauté for 30 seconds until fragrant.
- 4Add zucchini and asparagus to the skillet and cook for 4-5 minutes until tender-crisp, then add cherry tomatoes and cook for 2 minutes.
- 5Add cooked pasta and grilled shrimp to the vegetable mixture, toss gently with lemon juice, and cook for 1 minute until heated through.
- 6Season with salt and pepper, top with fresh basil, and serve immediately.
