Grilled Steak with Sweet Potato and Green Beans

Ingredients

  • 2 ribeye or New York strip steaks (1.5 inches thick)
  • 2 medium sweet potatoes
  • 8 oz fresh green beans
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh rosemary

Directions

  1. 1Preheat grill to high heat. Peel and cut sweet potatoes into 1/4-inch thick slices, toss with 1 tablespoon olive oil, salt, and pepper.
  2. 2Place sweet potato slices on grill for 4-5 minutes per side until tender and caramelized, set aside and keep warm.
  3. 3Season steaks generously with salt, pepper, and rosemary. Grill for 4-5 minutes per side for medium-rare, then rest for 5 minutes.
  4. 4Toss green beans with remaining olive oil, minced garlic, salt, and pepper. Grill in a foil packet or grill basket for 6-7 minutes, shaking occasionally.
  5. 5Serve steaks with sweet potatoes and green beans, topping steaks with a small pat of butter if desired.
