Grilled Steak with Sweet Potato and Green Beans

Ingredients
- •2 ribeye or New York strip steaks (1.5 inches thick)
- •2 medium sweet potatoes
- •8 oz fresh green beans
- •2 tablespoons olive oil
- •1 tablespoon butter
- •2 cloves garlic, minced
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •1 teaspoon fresh rosemary
Directions
- 1Preheat grill to high heat. Peel and cut sweet potatoes into 1/4-inch thick slices, toss with 1 tablespoon olive oil, salt, and pepper.
- 2Place sweet potato slices on grill for 4-5 minutes per side until tender and caramelized, set aside and keep warm.
- 3Season steaks generously with salt, pepper, and rosemary. Grill for 4-5 minutes per side for medium-rare, then rest for 5 minutes.
- 4Toss green beans with remaining olive oil, minced garlic, salt, and pepper. Grill in a foil packet or grill basket for 6-7 minutes, shaking occasionally.
- 5Serve steaks with sweet potatoes and green beans, topping steaks with a small pat of butter if desired.
