Grilled Vegetable Panini
A warm, crispy sandwich loaded with charred vegetables, melted cheese, and fresh basil on toasted bread.

Ingredients
- •1 medium zucchini, sliced lengthwise
- •1 medium red bell pepper, quartered
- •1 medium eggplant, sliced lengthwise
- •2 tablespoons olive oil
- •to taste salt and black pepper
- •4 slices ciabatta or focaccia bread
- •1 cup fresh mozzarella, sliced
- •1/4 cup fresh basil leaves
- •2 tablespoons roasted red pepper spread or pesto
- •2 tablespoons butter, softened
Directions
- 1Brush zucchini, bell pepper, and eggplant slices with olive oil and season with salt and pepper.
- 2Grill vegetables over medium-high heat for 3-4 minutes per side until tender and lightly charred.
- 3Spread roasted red pepper spread or pesto on two bread slices and butter the outer sides of all bread slices.
- 4Layer grilled vegetables, mozzarella, and fresh basil on the prepared bread slices.
- 5Press sandwiches together and grill in a panini press or skillet over medium heat for 2-3 minutes per side until bread is golden and cheese is melted.
- 6Remove from heat, slice diagonally if desired, and serve warm.
