Groundnut Soup
A rich and creamy West African peanut butter soup loaded with tender vegetables and protein.

Ingredients
- •2 tablespoons vegetable oil
- •1 large onion, chopped
- •1 pound chicken breast, cubed
- •4 cups chicken broth
- •1 cup natural peanut butter
- •2 large sweet potatoes, diced
- •2 cups spinach, chopped
- •1 red bell pepper, diced
- •2 cloves garlic, minced
- •1 teaspoon ground ginger
- •1 teaspoon salt
- •½ teaspoon cayenne pepper
Directions
- 1Heat oil in a large pot over medium-high heat and sauté onion and garlic until softened.
- 2Add chicken cubes and cook until browned on all sides, about 5 minutes.
- 3Pour in chicken broth and bring to a boil, then add diced sweet potatoes and ginger.
- 4Reduce heat and simmer for 15 minutes until sweet potatoes are tender.
- 5Stir in peanut butter until well combined and smooth.
- 6Add red bell pepper and spinach, stirring until spinach wilts.
- 7Season with salt and cayenne pepper, then simmer for 5 more minutes until flavors meld.
- 8Serve hot with rice or crusty bread.
