Groundnut Soup

A rich and creamy West African peanut butter soup loaded with tender vegetables and protein.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 1 pound chicken breast, cubed
  • 4 cups chicken broth
  • 1 cup natural peanut butter
  • 2 large sweet potatoes, diced
  • 2 cups spinach, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper

Directions

  1. 1Heat oil in a large pot over medium-high heat and sauté onion and garlic until softened.
  2. 2Add chicken cubes and cook until browned on all sides, about 5 minutes.
  3. 3Pour in chicken broth and bring to a boil, then add diced sweet potatoes and ginger.
  4. 4Reduce heat and simmer for 15 minutes until sweet potatoes are tender.
  5. 5Stir in peanut butter until well combined and smooth.
  6. 6Add red bell pepper and spinach, stirring until spinach wilts.
  7. 7Season with salt and cayenne pepper, then simmer for 5 more minutes until flavors meld.
  8. 8Serve hot with rice or crusty bread.
