Groundnut Stew with Beef
A rich and savory West African stew combining tender beef with creamy peanut butter and aromatic spices.

Ingredients
- •2 lbs beef chuck, cubed
- •1 cup natural peanut butter
- •2 tablespoons vegetable oil
- •1 large onion, diced
- •3 cloves garlic, minced
- •2 medium tomatoes, diced
- •4 cups beef broth
- •2 medium sweet potatoes, cubed
- •1 teaspoon ground ginger
- •1 teaspoon paprika
- •1/2 teaspoon cayenne pepper
- •to taste Salt and pepper
Directions
- 1Heat oil in a large pot over medium-high heat and brown the beef on all sides, about 8 minutes. Remove and set aside.
- 2In the same pot, sauté onion and garlic until fragrant, about 3 minutes. Add tomatoes and cook for 2 minutes.
- 3Stir in peanut butter until well combined, then add beef broth gradually while stirring to avoid lumps.
- 4Return beef to the pot and add ginger, paprika, cayenne, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
- 5Add sweet potatoes and continue simmering for 20-25 minutes until beef is tender and potatoes are cooked through.
- 6Taste and adjust seasonings as needed. Serve hot over rice.
