Ingredients

  • 2 lbs beef chuck, cubed
  • 1 cup natural peanut butter
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 4 cups beef broth
  • 2 medium sweet potatoes, cubed
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper

Directions

  1. 1Heat oil in a large pot over medium-high heat and brown the beef on all sides, about 8 minutes. Remove and set aside.
  2. 2In the same pot, sauté onion and garlic until fragrant, about 3 minutes. Add tomatoes and cook for 2 minutes.
  3. 3Stir in peanut butter until well combined, then add beef broth gradually while stirring to avoid lumps.
  4. 4Return beef to the pot and add ginger, paprika, cayenne, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. 5Add sweet potatoes and continue simmering for 20-25 minutes until beef is tender and potatoes are cooked through.
  6. 6Taste and adjust seasonings as needed. Serve hot over rice.
