Ingredients
- •2 English cucumbers, thinly sliced
- •1/4 medium red onion, very thinly sliced
- •1/2 cup sour cream
- •2 tbsp white vinegar
- •3 tbsp fresh dill, chopped
- •1 tsp granulated sugar
- •1/2 tsp salt
- •1/4 tsp black pepper
Directions
- 1Slice the cucumbers and red onion as thinly as possible and place them in a large bowl.
- 2Whisk sour cream, vinegar, dill, sugar, salt, and black pepper until smooth.
- 3Pour the dressing over the vegetables and toss gently until every slice is coated.
- 4Let the salad stand for 10 minutes so the cucumbers soften slightly and release a little juice.
- 5Toss once more and taste for salt and acidity.
- 6Serve chilled or pack in a sealed container for lunch.
💡 Use a mandoline for very thin cucumber slices; the creamy dressing should cling to flexible ribbons, not thick crunchy chunks.
