Ingredients

  • 2 English cucumbers, thinly sliced
  • 1/4 medium red onion, very thinly sliced
  • 1/2 cup sour cream
  • 2 tbsp white vinegar
  • 3 tbsp fresh dill, chopped
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Slice the cucumbers and red onion as thinly as possible and place them in a large bowl.
  2. 2Whisk sour cream, vinegar, dill, sugar, salt, and black pepper until smooth.
  3. 3Pour the dressing over the vegetables and toss gently until every slice is coated.
  4. 4Let the salad stand for 10 minutes so the cucumbers soften slightly and release a little juice.
  5. 5Toss once more and taste for salt and acidity.
  6. 6Serve chilled or pack in a sealed container for lunch.

💡 Use a mandoline for very thin cucumber slices; the creamy dressing should cling to flexible ribbons, not thick crunchy chunks.
