Guyanese Cheese Rolls

Ingredients
- •3 cups all-purpose flour
- •1 cup unsalted butter, cold and cubed
- •1 tsp salt
- •3/4 cup cold water
- •2 cups sharp cheddar cheese, shredded
- •1 tbsp yellow mustard
- •1/4 tsp black pepper
- •1 tsp hot sauce
- •1 egg, beaten
Directions
- 1Rub cold butter into flour and salt until coarse crumbs form.
- 2Add cold water gradually and bring the pastry together without overworking it.
- 3Mix cheddar, mustard, black pepper, and hot sauce.
- 4Roll pastry into rectangles, add cheese filling, and roll into logs.
- 5Brush with beaten egg and bake at 400°F (200°C) for 20–25 minutes.
- 6Cool for 10 minutes before serving.
