Guyanese Cook-Up Rice
Guyanese one-pot rice with black-eyed peas, coconut milk, herbs, and smoked meat for a hearty meal-prep lunch.

Ingredients
- •2 cups long-grain white rice
- •2 cans (15 oz each) canned black-eyed peas, drained
- •8 oz smoked ham, diced
- •1 can (13.5 oz) coconut milk
- •2 cups chicken broth
- •1 medium yellow onion, diced
- •3 cloves garlic, minced
- •1 tbsp fresh thyme leaves
- •3 green onions, sliced
- •1 tsp salt
- •1/2 tsp black pepper
Directions
- 1Cook smoked ham and onion in a pot for 5 minutes.
- 2Add garlic and thyme and cook for 30 seconds.
- 3Add rice, black-eyed peas, coconut milk, chicken broth, salt, and black pepper.
- 4Bring to a boil, cover, and simmer for 18 minutes.
- 5Rest covered for 5 minutes, then fluff the rice.
- 6Fold in green onions and serve.
💡 Keep the pot covered during the final rest so the coconut rice finishes steaming.
