Guyanese Cook-Up Rice

Guyanese one-pot rice with black-eyed peas, coconut milk, herbs, and smoked meat for a hearty meal-prep lunch.

Ingredients

  • 2 cups long-grain white rice
  • 2 cans (15 oz each) canned black-eyed peas, drained
  • 8 oz smoked ham, diced
  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 green onions, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. 1Cook smoked ham and onion in a pot for 5 minutes.
  2. 2Add garlic and thyme and cook for 30 seconds.
  3. 3Add rice, black-eyed peas, coconut milk, chicken broth, salt, and black pepper.
  4. 4Bring to a boil, cover, and simmer for 18 minutes.
  5. 5Rest covered for 5 minutes, then fluff the rice.
  6. 6Fold in green onions and serve.

💡 Keep the pot covered during the final rest so the coconut rice finishes steaming.
