Guyanese Egg Ball (Cassava-Wrapped Egg Snack)

Guyanese snack of hard-boiled egg wrapped in seasoned cassava, then fried until crisp.

Ingredients

  • 2 lb cassava, peeled and cut into chunks
  • 6 eggs
  • 3 green onions, finely sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 5 cups vegetable oil for frying

Directions

  1. 1Boil the cassava for 18–20 minutes until tender, then remove any tough centre fibres.
  2. 2Boil the eggs for 9 minutes, cool, and peel.
  3. 3Mash cassava with green onions, garlic, thyme, salt, and black pepper.
  4. 4Wrap each egg completely in an even layer of cassava mash.
  5. 5Fry at 350°F (175°C) for 4–5 minutes until golden.
  6. 6Drain briefly and serve warm or at room temperature.

💡 Remove the woody cassava core before mashing; it stays fibrous even after boiling.
