Guyanese Egg Ball (Cassava-Wrapped Egg Snack)
Guyanese snack of hard-boiled egg wrapped in seasoned cassava, then fried until crisp.

Ingredients
- •2 lb cassava, peeled and cut into chunks
- •6 eggs
- •3 green onions, finely sliced
- •2 cloves garlic, minced
- •1 tsp fresh thyme leaves
- •1 tsp salt
- •1/4 tsp black pepper
- •5 cups vegetable oil for frying
Directions
- 1Boil the cassava for 18–20 minutes until tender, then remove any tough centre fibres.
- 2Boil the eggs for 9 minutes, cool, and peel.
- 3Mash cassava with green onions, garlic, thyme, salt, and black pepper.
- 4Wrap each egg completely in an even layer of cassava mash.
- 5Fry at 350°F (175°C) for 4–5 minutes until golden.
- 6Drain briefly and serve warm or at room temperature.
💡 Remove the woody cassava core before mashing; it stays fibrous even after boiling.
