Gyeran Bap (Egg Rice Bowl)
A simple, beloved Korean breakfast or quick lunch of hot steamed rice topped with a fried egg, butter, soy sauce, and sesame oil — the whole thing stirred together into something far greater than the sum of its parts. It's ready in 10 minutes and endlessly comforting.

Ingredients
- •2 cups cooked short-grain white rice, hot
- •2 eggs
- •2 tsp unsalted butter
- •2 tsp soy sauce
- •1 tsp sesame oil
- •1 tsp neutral oil
- •1 green onion, thinly sliced
- •0.5 tsp sesame seeds
- •0.25 tsp gochugaru or red pepper flakes (optional)
- •2 nori (seaweed) sheets, crumbled (optional)
Directions
- 1Heat a small non-stick pan over medium heat; add neutral oil.
- 2Fry eggs sunny-side up until whites are fully set but yolks remain runny, about 2–3 minutes.
- 3Scoop hot rice into two bowls, leaving a well in the centre of each.
- 4Immediately place 1 tsp butter on the hot rice in each bowl and let it melt.
- 5Slide a fried egg on top of each bowl.
- 6Drizzle 1 tsp soy sauce and 0.5 tsp sesame oil over each bowl.
- 7Scatter green onion, sesame seeds, and gochugaru (if using) over the top.
- 8Break the yolk and stir everything together vigorously before eating, mixing the butter and egg through the rice.
💡 Short-grain rice (sold as 'sushi rice' at most Canadian grocery stores) gives the best texture here — the starch helps the egg and sauce coat every grain. Crumbled seasoned nori snack sheets (sold at Costco and most grocery stores) make a great topping. This is a wonderful way to use leftover rice from the night before.
