Gyeran Jjim (Korean Steamed Eggs)
Korean steamed egg custard made in the microwave until softly puffed, with scallion and sesame oil for a fast savoury breakfast.

Ingredients
- •4 eggs
- •3/4 cup water
- •1 green onion, thinly sliced
- •1 tsp sesame oil
- •1/2 tsp salt
- •1 tsp sesame seeds
Directions
- 1Whisk the eggs, water, and salt until completely combined but not frothy.
- 2Stir in half the green onion and pour the mixture into a deep microwave-safe bowl.
- 3Cover loosely and microwave on 70% power for 2 minutes.
- 4Stir gently from the edge toward the centre, then microwave 1–2 minutes more until softly set.
- 5Rest the custard for 1 minute so the residual heat finishes the centre.
- 6Drizzle with sesame oil and top with remaining green onion and sesame seeds.
💡 Use reduced microwave power; full power sets the outside too quickly and leaves a rubbery ring around a liquid centre.
