Gyeran Jjim (Korean Steamed Eggs)

Korean steamed egg custard made in the microwave until softly puffed, with scallion and sesame oil for a fast savoury breakfast.

Ingredients

  • 4 eggs
  • 3/4 cup water
  • 1 green onion, thinly sliced
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1 tsp sesame seeds

Directions

  1. 1Whisk the eggs, water, and salt until completely combined but not frothy.
  2. 2Stir in half the green onion and pour the mixture into a deep microwave-safe bowl.
  3. 3Cover loosely and microwave on 70% power for 2 minutes.
  4. 4Stir gently from the edge toward the centre, then microwave 1–2 minutes more until softly set.
  5. 5Rest the custard for 1 minute so the residual heat finishes the centre.
  6. 6Drizzle with sesame oil and top with remaining green onion and sesame seeds.

💡 Use reduced microwave power; full power sets the outside too quickly and leaves a rubbery ring around a liquid centre.
