Tender sliced beef simmered in a sweet and savory sauce served over steaming hot rice.

Ingredients
- •300g beef ribeye or sirloin, thinly sliced
- •1 large onion, sliced
- •2 cups cooked short-grain rice
- •1/4 cup soy sauce
- •3 tablespoons mirin
- •2 tablespoons sugar
- •1/2 cup beef or chicken broth
- •1 teaspoon grated ginger
- •2 cloves garlic, minced
- •2 eggs
- •2 green onions chopped
- •1 tablespoon vegetable oil
Directions
- 1Heat oil in a large skillet over medium-high heat and cook the sliced beef until browned, about 3 minutes, then remove and set aside.
- 2In the same skillet, add onions and cook until softened, about 4 minutes.
- 3Return the beef to the skillet and add soy sauce, mirin, sugar, broth, ginger, and garlic.
- 4Simmer the mixture for 5-7 minutes until the sauce reduces slightly and the flavors meld together.
- 5Divide the rice into bowls and top with the beef and onion mixture.
- 6Lightly beat the eggs and slowly pour over the hot beef and rice, allowing the residual heat to cook the eggs into soft curds.
- 7Garnish with green onions and serve immediately.
