Gyudon

Tender sliced beef simmered in a sweet and savory sauce served over steaming hot rice.

Ingredients

  • 300g beef ribeye or sirloin, thinly sliced
  • 1 large onion, sliced
  • 2 cups cooked short-grain rice
  • 1/4 cup soy sauce
  • 3 tablespoons mirin
  • 2 tablespoons sugar
  • 1/2 cup beef or chicken broth
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 2 eggs
  • 2 green onions chopped
  • 1 tablespoon vegetable oil

Directions

  1. 1Heat oil in a large skillet over medium-high heat and cook the sliced beef until browned, about 3 minutes, then remove and set aside.
  2. 2In the same skillet, add onions and cook until softened, about 4 minutes.
  3. 3Return the beef to the skillet and add soy sauce, mirin, sugar, broth, ginger, and garlic.
  4. 4Simmer the mixture for 5-7 minutes until the sauce reduces slightly and the flavors meld together.
  5. 5Divide the rice into bowls and top with the beef and onion mixture.
  6. 6Lightly beat the eggs and slowly pour over the hot beef and rice, allowing the residual heat to cook the eggs into soft curds.
  7. 7Garnish with green onions and serve immediately.
