Ingredients

  • 1.5 lbs beef tongue, cleaned and trimmed
  • 3 tbsp miso paste
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sake
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • 2 scallions, chopped
  • 1 tsp sesame seeds

Directions

  1. 1Boil the beef tongue in water for 30 minutes until partially tender, then cool and slice thinly against the grain.
  2. 2Mix miso paste, soy sauce, mirin, sake, minced garlic, and grated ginger in a bowl to create the sauce.
  3. 3Heat vegetable oil in a large skillet or grill pan over medium-high heat until shimmering.
  4. 4Grill the tongue slices for 2-3 minutes per side until lightly charred and cooked through.
  5. 5Brush the sauce generously over the cooked tongue slices while still on the heat.
  6. 6Transfer to a serving plate and garnish with chopped scallions and sesame seeds.
  7. 7Serve immediately while hot with steamed rice.
