Gyutan (Grilled Beef Tongue)
Tender, thinly sliced beef tongue grilled to perfection and seasoned with a savory miso-based sauce.

Ingredients
- •1.5 lbs beef tongue, cleaned and trimmed
- •3 tbsp miso paste
- •2 tbsp soy sauce
- •1 tbsp mirin
- •1 tbsp sake
- •2 cloves garlic, minced
- •1 tsp ginger, grated
- •2 tbsp vegetable oil
- •2 scallions, chopped
- •1 tsp sesame seeds
Directions
- 1Boil the beef tongue in water for 30 minutes until partially tender, then cool and slice thinly against the grain.
- 2Mix miso paste, soy sauce, mirin, sake, minced garlic, and grated ginger in a bowl to create the sauce.
- 3Heat vegetable oil in a large skillet or grill pan over medium-high heat until shimmering.
- 4Grill the tongue slices for 2-3 minutes per side until lightly charred and cooked through.
- 5Brush the sauce generously over the cooked tongue slices while still on the heat.
- 6Transfer to a serving plate and garnish with chopped scallions and sesame seeds.
- 7Serve immediately while hot with steamed rice.
