Haitian breakfast spaghetti tossed with sliced hot dogs, tomato paste, onion, bell pepper, garlic, and thyme in a savoury pan sauce.

Ingredients

  • 12 oz spaghetti
  • 6 beef hot dogs, sliced
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 3 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 1 tsp dried thyme
  • 1/2 cup water
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. 1Boil the spaghetti in salted water until just tender, then drain and reserve 1/2 cup cooking water.
  2. 2Heat vegetable oil and brown the sliced hot dogs for 4 minutes.
  3. 3Add onion, bell pepper, garlic, and thyme and cook for 4 minutes.
  4. 4Stir in tomato paste and cook for 1 minute until it darkens slightly.
  5. 5Add water, salt, black pepper, and spaghetti and toss for 3–4 minutes.
  6. 6Serve the Haitian spaghetti hot while the sauce still clings to the noodles.

💡 Cook the pasta only to just tender before tossing; the noodles absorb the tomato sauce and continue softening in the skillet.
