Haitian Spaghetti (Haitian Breakfast Spaghetti)
Haitian breakfast spaghetti tossed with sliced hot dogs, tomato paste, onion, bell pepper, garlic, and thyme in a savoury pan sauce.

Ingredients
- •12 oz spaghetti
- •6 beef hot dogs, sliced
- •1 medium yellow onion, thinly sliced
- •1 green bell pepper, sliced
- •3 cloves garlic, minced
- •3 tbsp tomato paste
- •2 tbsp vegetable oil
- •1 tsp dried thyme
- •1/2 cup water
- •1 tsp salt
- •1/2 tsp black pepper
Directions
- 1Boil the spaghetti in salted water until just tender, then drain and reserve 1/2 cup cooking water.
- 2Heat vegetable oil and brown the sliced hot dogs for 4 minutes.
- 3Add onion, bell pepper, garlic, and thyme and cook for 4 minutes.
- 4Stir in tomato paste and cook for 1 minute until it darkens slightly.
- 5Add water, salt, black pepper, and spaghetti and toss for 3–4 minutes.
- 6Serve the Haitian spaghetti hot while the sauce still clings to the noodles.
💡 Cook the pasta only to just tender before tossing; the noodles absorb the tomato sauce and continue softening in the skillet.
