Hash with Fried Egg

Ingredients
- •3 tablespoons butter
- •2 cups diced cooked potatoes
- •1 can (12 oz) corned beef, diced
- •1 medium onion, finely diced
- •1/2 cup diced bell pepper
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •4 eggs
Directions
- 1Melt 2 tablespoons of butter in a large skillet over medium-high heat.
- 2Add the diced potatoes, corned beef, onion, and bell pepper, stirring occasionally until the edges are crispy and golden, about 10-12 minutes. Season with salt and pepper.
- 3Make 2 wells in the hash by pushing it to the sides, then add remaining butter to the centers.
- 4Crack 2 eggs into each well and cook until the whites are set but yolks remain runny, about 3-4 minutes.
- 5Slide onto plates and serve hot with toast or hash browns.
