Ingredients

  • 3 tablespoons butter
  • 2 cups diced cooked potatoes
  • 1 can (12 oz) corned beef, diced
  • 1 medium onion, finely diced
  • 1/2 cup diced bell pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 eggs

Directions

  1. 1Melt 2 tablespoons of butter in a large skillet over medium-high heat.
  2. 2Add the diced potatoes, corned beef, onion, and bell pepper, stirring occasionally until the edges are crispy and golden, about 10-12 minutes. Season with salt and pepper.
  3. 3Make 2 wells in the hash by pushing it to the sides, then add remaining butter to the centers.
  4. 4Crack 2 eggs into each well and cook until the whites are set but yolks remain runny, about 3-4 minutes.
  5. 5Slide onto plates and serve hot with toast or hash browns.
