Hausa Koko (Ghanaian Spiced Millet Porridge)

Ghanaian millet breakfast porridge seasoned with ginger, cloves, and a gentle chile warmth, cooked smooth and served steaming.

Ingredients

  • 1 cup millet flour
  • 5 cups water
  • 1 tbsp fresh ginger, finely grated
  • 1/4 tsp ground cloves
  • 1 pinch cayenne pepper
  • 2 tbsp granulated sugar
  • 1/4 tsp salt

Directions

  1. 1Whisk millet flour with 2 cups cold water until completely smooth and free of lumps.
  2. 2Bring the remaining water, ginger, cloves, cayenne, and salt to a boil in a saucepan.
  3. 3Whisk the millet mixture again, then pour it slowly into the boiling spiced water.
  4. 4Reduce heat and cook 12–15 minutes, whisking often as the porridge thickens.
  5. 5Stir in sugar and cook 1 minute more until dissolved.
  6. 6Serve hot, adding a splash of water if you prefer a thinner porridge.

💡 Whisk the millet slurry just before pouring; settled flour added in one lump is difficult to smooth once the porridge thickens.
