Hausa Koko (Ghanaian Spiced Millet Porridge)
Ghanaian millet breakfast porridge seasoned with ginger, cloves, and a gentle chile warmth, cooked smooth and served steaming.

Ingredients
- •1 cup millet flour
- •5 cups water
- •1 tbsp fresh ginger, finely grated
- •1/4 tsp ground cloves
- •1 pinch cayenne pepper
- •2 tbsp granulated sugar
- •1/4 tsp salt
Directions
- 1Whisk millet flour with 2 cups cold water until completely smooth and free of lumps.
- 2Bring the remaining water, ginger, cloves, cayenne, and salt to a boil in a saucepan.
- 3Whisk the millet mixture again, then pour it slowly into the boiling spiced water.
- 4Reduce heat and cook 12–15 minutes, whisking often as the porridge thickens.
- 5Stir in sugar and cook 1 minute more until dissolved.
- 6Serve hot, adding a splash of water if you prefer a thinner porridge.
💡 Whisk the millet slurry just before pouring; settled flour added in one lump is difficult to smooth once the porridge thickens.
