Hawaiian Ham and Pineapple Skillet

Ingredients

  • 2 tablespoons butter
  • 1.5 pounds ham steak, cubed
  • 1 can (20 oz) pineapple chunks in juice
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground ginger
  • 1 red bell pepper, diced
  • 2 cups cooked rice

Directions

  1. 1Melt butter in a large skillet over medium-high heat and brown the ham cubes for 3-4 minutes, stirring occasionally.
  2. 2In a small bowl, whisk together brown sugar, soy sauce, vinegar, cornstarch, and ginger until smooth.
  3. 3Drain pineapple juice into the skillet, reserving the chunks, and stir in the sauce mixture.
  4. 4Add the bell pepper and pineapple chunks to the skillet and simmer for 8-10 minutes until the sauce thickens.
  5. 5Serve the ham and pineapple mixture over cooked rice.
