Herb-marinated Lamb Skewers

Ingredients

  • 2 lbs lamb shoulder, cut into 1.5-inch cubes
  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. 1In a bowl, whisk together olive oil, lemon juice, minced garlic, mint, parsley, cumin, coriander, paprika, cayenne, salt, and pepper to create the marinade.
  2. 2Add lamb cubes to the marinade, toss well to coat evenly, and refrigerate for at least 30 minutes or up to 4 hours.
  3. 3Soak wooden skewers in water for 15 minutes, then thread marinated lamb cubes onto skewers, leaving a small space between pieces.
  4. 4Preheat grill or grill pan to medium-high heat and lightly oil the grates.
  5. 5Grill skewers for 12-15 minutes, turning every 3-4 minutes, until lamb is cooked through and has a light char on the outside.
  6. 6Let rest for 3 minutes before serving with lemon wedges, flatbread, and tahini sauce.
