Herb-marinated Lamb Skewers

Ingredients
- •2 lbs lamb shoulder, cut into 1.5-inch cubes
- •1/4 cup olive oil
- •3 tbsp fresh lemon juice
- •4 cloves garlic, minced
- •2 tbsp fresh mint, chopped
- •2 tbsp fresh parsley, chopped
- •1 tbsp ground cumin
- •1 tsp ground coriander
- •1 tsp paprika
- •1/2 tsp cayenne pepper
- •1 tsp salt
- •1/2 tsp black pepper
Directions
- 1In a bowl, whisk together olive oil, lemon juice, minced garlic, mint, parsley, cumin, coriander, paprika, cayenne, salt, and pepper to create the marinade.
- 2Add lamb cubes to the marinade, toss well to coat evenly, and refrigerate for at least 30 minutes or up to 4 hours.
- 3Soak wooden skewers in water for 15 minutes, then thread marinated lamb cubes onto skewers, leaving a small space between pieces.
- 4Preheat grill or grill pan to medium-high heat and lightly oil the grates.
- 5Grill skewers for 12-15 minutes, turning every 3-4 minutes, until lamb is cooked through and has a light char on the outside.
- 6Let rest for 3 minutes before serving with lemon wedges, flatbread, and tahini sauce.
