Herring on Rye
A classic Scandinavian breakfast of tangy pickled herring served atop crispy rye toast with fresh toppings.

Ingredients
- •4 slices rye bread
- •8 oz pickled herring fillets
- •2 tablespoons butter
- •1/4 cup sour cream
- •1/2 red onion, thinly sliced
- •2 tablespoons fresh dill
- •1 lemon, cut into wedges
- •2 hard-boiled eggs, sliced
- •to taste salt and pepper
Directions
- 1Toast the rye bread slices until golden and crispy.
- 2Spread butter evenly on each toasted slice.
- 3Top each slice with a generous dollop of sour cream.
- 4Arrange 2-3 herring fillets on top of the sour cream.
- 5Garnish with sliced red onion, fresh dill, and hard-boiled egg slices.
- 6Season with salt and pepper to taste.
- 7Serve immediately with lemon wedges on the side.
