Ingredients
- •2 pounds fresh hibiscus leaves, chopped
- •1 pound beef or fish, cubed
- •2 medium onions, diced
- •3 large tomatoes, chopped
- •4 cloves garlic, minced
- •6 cups beef or vegetable broth
- •3 tablespoons palm oil or vegetable oil
- •1 teaspoon salt
- •1/2 teaspoon ground black pepper
- •2 bay leaves
- •1 tablespoon dried shrimp, crushed (optional)
Directions
- 1Heat palm oil in a large pot over medium-high heat, then add diced onions and garlic, sautéing until fragrant.
- 2Add the cubed meat and brown on all sides, about 5 minutes.
- 3Stir in chopped tomatoes and cook for 3-4 minutes until softened.
- 4Pour in the broth and bring to a boil, then reduce heat and simmer for 10 minutes.
- 5Add the chopped hibiscus leaves, bay leaves, and dried shrimp if using, stirring well.
- 6Season with salt and pepper, then simmer for 15-20 minutes until the leaves are tender and flavors are combined.
