Ingredients

  • 2 pounds fresh hibiscus leaves, chopped
  • 1 pound beef or fish, cubed
  • 2 medium onions, diced
  • 3 large tomatoes, chopped
  • 4 cloves garlic, minced
  • 6 cups beef or vegetable broth
  • 3 tablespoons palm oil or vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 bay leaves
  • 1 tablespoon dried shrimp, crushed (optional)

Directions

  1. 1Heat palm oil in a large pot over medium-high heat, then add diced onions and garlic, sautéing until fragrant.
  2. 2Add the cubed meat and brown on all sides, about 5 minutes.
  3. 3Stir in chopped tomatoes and cook for 3-4 minutes until softened.
  4. 4Pour in the broth and bring to a boil, then reduce heat and simmer for 10 minutes.
  5. 5Add the chopped hibiscus leaves, bay leaves, and dried shrimp if using, stirring well.
  6. 6Season with salt and pepper, then simmer for 15-20 minutes until the leaves are tender and flavors are combined.
