Hodge Podge (Maritime Summer Vegetable Stew)
New potatoes and summer vegetables barely cooked, finished with cream and butter. A Nova Scotian July dish.

Ingredients
- •400 g new potatoes, halved
- •250 g green beans, trimmed
- •250 g carrots, sliced
- •200 g frozen peas
- •250 ml heavy cream
- •30 g butter
Directions
- 1Put the new potatoes in a pot with just enough salted water to cover and boil twelve minutes.
- 2Add the carrots and cook five minutes.
- 3Add the green beans and cook five minutes more.
- 4Add the peas and cook two minutes, until everything is tender but nothing has gone soft.
- 5Pour off most of the water, leaving a little in the bottom of the pot.
- 6Add the cream and butter and warm three minutes without boiling, then season and serve.
💡 Never let it boil after the cream goes in. Hodge podge is a broth, not a sauce, and boiling splits it.
