Hodge Podge (Maritime Summer Vegetable Stew)

New potatoes and summer vegetables barely cooked, finished with cream and butter. A Nova Scotian July dish.

Ingredients

  • 400 g new potatoes, halved
  • 250 g green beans, trimmed
  • 250 g carrots, sliced
  • 200 g frozen peas
  • 250 ml heavy cream
  • 30 g butter

Directions

  1. 1Put the new potatoes in a pot with just enough salted water to cover and boil twelve minutes.
  2. 2Add the carrots and cook five minutes.
  3. 3Add the green beans and cook five minutes more.
  4. 4Add the peas and cook two minutes, until everything is tender but nothing has gone soft.
  5. 5Pour off most of the water, leaving a little in the bottom of the pot.
  6. 6Add the cream and butter and warm three minutes without boiling, then season and serve.

💡 Never let it boil after the cream goes in. Hodge podge is a broth, not a sauce, and boiling splits it.
