Homemade Mozzarella String Cheese
Stretchy, delicious mozzarella cheese you can pull into strings and eat fresh or fried.

Ingredients
- •1 gallon whole milk
- •1.5 teaspoons liquid rennet diluted in 1/4 cup cool water
- •1.5 teaspoons salt
- •1/4 teaspoon lipase powder (optional)
- •as needed ice water
Directions
- 1Heat milk to 90°F, add diluted rennet, stir gently for 1 minute, then let sit for 5 minutes until curds form.
- 2Cut curds into small pieces and slowly heat to 105°F while stirring gently for 5 minutes.
- 3Drain whey through cheesecloth, reserving 1 cup of whey, and heat curds to 90°F.
- 4Microwave curds in 1-minute intervals, stirring and adding reserved whey as needed, until curds become smooth and stretch like taffy.
- 5Pull and stretch the cheese repeatedly until it's shiny, then form into strings on a clean surface.
- 6Cool strings in ice water bath for 5 minutes until firm.
