Honey-Glazed Carrots

Ingredients
- •1.5 lb carrots, peeled and cut into 1/2-inch diagonal coins
- •2 tbsp unsalted butter
- •2 tbsp honey
- •1/4 cup water
- •1/2 tsp salt
- •1/4 tsp black pepper
- •1/4 tsp dried thyme
- •1 tbsp fresh parsley, chopped
Directions
- 1Combine carrots, butter, honey, water, salt, pepper, and thyme in a wide skillet over medium-high heat.
- 2Bring to a boil, then reduce heat to medium, cover, and cook for 8 minutes until carrots are just tender.
- 3Uncover, increase heat to medium-high, and cook stirring frequently for 4–5 minutes until the liquid reduces to a glossy glaze that coats the carrots.
- 4Remove from heat, sprinkle with fresh parsley, and serve immediately.
💡 Baby carrots work perfectly here — no peeling or cutting required. For a maple-forward Canadian twist, substitute maple syrup for the honey.
