Ingredients
- •2 cups all-purpose flour
- •1 tsp instant yeast
- •1 tbsp granulated sugar
- •1/2 tsp kosher salt
- •3/4 cup warm milk
- •1 tbsp, plus more for cooking neutral oil
- •1/2 cup brown sugar
- •1 tsp ground cinnamon
- •1/3 cup walnuts, finely chopped
Directions
- 1Mix flour, yeast, granulated sugar, and salt; add warm milk and 1 tablespoon oil and knead until a soft, slightly tacky dough forms.
- 2Cover the flour dough and let it rise 45 minutes, until visibly puffy.
- 3Mix brown sugar, cinnamon, and walnuts; divide the dough into 6 pieces and flatten each into a 4-inch round.
- 4Place 1 1/2 tablespoons brown-sugar filling in each dough round, pinch the edges closed, and shape seam-side down.
- 5Heat a thin layer of neutral oil in a skillet over medium and add 2–3 brown-sugar-filled flour dough balls.
- 6Cook each brown-sugar-filled flour dough ball 1 minute, flip, press to 1/2 inch thick, and cook 2–3 minutes per side until golden.
💡 Seal the filling completely before the pancake hits the pan; any loose seam lets molten sugar escape and burn against the skillet.
