Huevos Motuleños (Yucatán Eggs with Beans and Plantain)

Ingredients
- •8 corn tortillas
- •8 eggs
- •300 g black beans, cooked and mashed
- •2 ripe plantains, sliced and fried
- •400 g tomato sauce
- •120 g queso fresco, crumbled
- •120 g frozen peas
Directions
- 1Warm the tomato sauce and the mashed black beans in separate pans and keep both hot.
- 2Cook the peas three minutes in salted water and drain them.
- 3Warm the tortillas until soft and pliable.
- 4Spread four tortillas with black beans, lay a second tortilla on each, and spread those too.
- 5Fry the eggs four minutes until the whites are set and the yolks still soft, then lay two on each stack.
- 6Spoon tomato sauce over, then add the fried plantain, peas and crumbled queso fresco.
