Huevos Motuleños (Yucatán Eggs with Beans and Plantain)

Ingredients

  • 8 corn tortillas
  • 8 eggs
  • 300 g black beans, cooked and mashed
  • 2 ripe plantains, sliced and fried
  • 400 g tomato sauce
  • 120 g queso fresco, crumbled
  • 120 g frozen peas

Directions

  1. 1Warm the tomato sauce and the mashed black beans in separate pans and keep both hot.
  2. 2Cook the peas three minutes in salted water and drain them.
  3. 3Warm the tortillas until soft and pliable.
  4. 4Spread four tortillas with black beans, lay a second tortilla on each, and spread those too.
  5. 5Fry the eggs four minutes until the whites are set and the yolks still soft, then lay two on each stack.
  6. 6Spoon tomato sauce over, then add the fried plantain, peas and crumbled queso fresco.
