Hummingbird Cake

Ingredients
- •2 cups all-purpose flour
- •2 teaspoons baking soda
- •1 teaspoon ground cinnamon
- •1/2 teaspoon salt
- •1.5 cups granulated sugar
- •3/4 cup vegetable oil
- •3 large eggs
- •1 teaspoon vanilla extract
- •1 can (8 oz) crushed pineapple with juice
- •2 medium ripe bananas, mashed
- •8 oz cream cheese, softened
- •1/2 cup butter, softened
- •2 cups powdered sugar
Directions
- 1Preheat oven to 350°F and grease three 8-inch round cake pans. Mix flour, baking soda, cinnamon, and salt in a bowl.
- 2In another bowl, whisk together sugar, oil, eggs, and vanilla until combined. Fold in the flour mixture, then gently stir in pineapple and bananas.
- 3Divide batter evenly among prepared pans and bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
- 4Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
- 5Beat cream cheese and butter together until fluffy, then gradually add powdered sugar, beating until smooth and spreadable.
- 6Place one cake layer on a serving plate, spread frosting on top, and repeat with remaining layers. Frost the top and sides of the entire cake.
