Hummingbird Cake

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1.5 cups granulated sugar
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) crushed pineapple with juice
  • 2 medium ripe bananas, mashed
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar

Directions

  1. 1Preheat oven to 350°F and grease three 8-inch round cake pans. Mix flour, baking soda, cinnamon, and salt in a bowl.
  2. 2In another bowl, whisk together sugar, oil, eggs, and vanilla until combined. Fold in the flour mixture, then gently stir in pineapple and bananas.
  3. 3Divide batter evenly among prepared pans and bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  4. 4Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  5. 5Beat cream cheese and butter together until fluffy, then gradually add powdered sugar, beating until smooth and spreadable.
  6. 6Place one cake layer on a serving plate, spread frosting on top, and repeat with remaining layers. Frost the top and sides of the entire cake.
