Ingredients

  • 36 thin chocolate wafer cookies
  • 2 cups heavy whipping cream
  • 3 tablespoons granulated sugar
  • 2 teaspoons vanilla extract
  • 3 tablespoons cocoa powder
  • 2 ounces semi-sweet chocolate, finely chopped

Directions

  1. 1Whip heavy cream with sugar and vanilla extract until stiff peaks form.
  2. 2Fold cocoa powder into whipped cream until fully combined, then gently fold in chopped chocolate.
  3. 3Spread a thin layer of chocolate cream on a wafer cookie, stack another cookie on top, and repeat until you have 6 cookies stacked per column.
  4. 4Stand the stacks upright side by side on a serving platter, then frost the entire cake with remaining chocolate cream.
  5. 5Cover loosely with plastic wrap and refrigerate for at least 8 hours or overnight until wafers soften.
