Idiyappam

Ingredients
- •2 cups rice flour
- •1/2 cup grated coconut
- •2 tablespoons ghee
- •1 teaspoon salt
- •3/4 cup warm water
- •2 tablespoons oil
- •1 onion, finely chopped
- •2 cloves garlic, minced
- •2 green chilies, chopped
- •1/4 teaspoon cumin seeds
- •1 cup coconut milk
- •1 cup vegetable broth
Directions
- 1Mix rice flour, grated coconut, ghee, and salt in a bowl. Gradually add warm water while mixing until the dough resembles breadcrumbs.
- 2Press the dough through an idiyappam maker or noodle press directly onto greased idli plates, coiling it in circular layers.
- 3Steam the plates in a steamer for 5-7 minutes until the noodles are cooked through and firm.
- 4Heat oil in a pan and add cumin seeds, then sauté onions, garlic, and green chilies until fragrant.
- 5Add coconut milk and vegetable broth, bringing to a simmer and seasoning with salt to taste.
- 6Gently remove the steamed idiyappam coils from the plates onto serving bowls.
- 7Pour the hot curry over the idiyappam and serve immediately with lime wedges.
