Ingredients
- •2 cups rice
- •3/4 cup urad dal (white lentils)
- •1/4 teaspoon fenugreek seeds
- •1 teaspoon salt
- •1/4 teaspoon baking soda
- •as needed water
Directions
- 1Soak rice, urad dal, and fenugreek seeds separately in water for 4-6 hours.
- 2Grind urad dal with fenugreek seeds and a little water into a fluffy batter, transfer to a bowl.
- 3Grind soaked rice with water into a smooth batter and mix with urad dal batter, salt, and let ferment overnight (8-12 hours) until batter rises.
- 4Add baking soda to the fermented batter and mix gently just before cooking.
- 5Fill greased idli molds with batter and steam in an idli maker for 5-7 minutes until a toothpick comes out clean.
- 6Let cool for 2 minutes, remove idlis from molds, and serve hot with sambar and chutney.
