A creamy Kenyan comfort dish of mashed potatoes and corn blended with sautéed onions and spinach.

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 cups fresh or frozen corn kernels
  • 3 cups fresh spinach or kale, chopped
  • 2 medium onions, finely chopped
  • 3 tablespoons butter or vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup milk or cooking water
  • 2 fresh tomatoes, diced (optional)

Directions

  1. 1Boil potatoes in salted water for 15 minutes until tender.
  2. 2Heat butter in a large pan and sauté onions and garlic until golden.
  3. 3Add chopped spinach or kale to the pan and cook for 2-3 minutes until wilted.
  4. 4Add corn kernels and tomatoes to the pan, cooking for another 2-3 minutes.
  5. 5Drain potatoes and add them to the pan with vegetables.
  6. 6Mash everything together with a potato masher until you reach desired consistency, adding milk as needed.
  7. 7Season with salt and pepper to taste, stirring well.
  8. 8Serve hot as a main dish, optionally with grilled meat or beans.
