A creamy Kenyan comfort dish of mashed potatoes and corn blended with sautéed onions and spinach.

Ingredients
- •4 medium potatoes, peeled and cubed
- •2 cups fresh or frozen corn kernels
- •3 cups fresh spinach or kale, chopped
- •2 medium onions, finely chopped
- •3 tablespoons butter or vegetable oil
- •4 cloves garlic, minced
- •1 teaspoon salt
- •½ teaspoon black pepper
- •½ cup milk or cooking water
- •2 fresh tomatoes, diced (optional)
Directions
- 1Boil potatoes in salted water for 15 minutes until tender.
- 2Heat butter in a large pan and sauté onions and garlic until golden.
- 3Add chopped spinach or kale to the pan and cook for 2-3 minutes until wilted.
- 4Add corn kernels and tomatoes to the pan, cooking for another 2-3 minutes.
- 5Drain potatoes and add them to the pan with vegetables.
- 6Mash everything together with a potato masher until you reach desired consistency, adding milk as needed.
- 7Season with salt and pepper to taste, stirring well.
- 8Serve hot as a main dish, optionally with grilled meat or beans.
