Ispanaklı Börek (Spinach and Feta Phyllo Rolls)
Flaky, golden phyllo rolls stuffed with a savoury spinach and feta filling — a beloved Turkish pastry that works as a snack, lunch, or party appetizer.

Ingredients
- •1/2 package (about 250 g) frozen phyllo dough, thawed
- •2 cups frozen chopped spinach, thawed and squeezed very dry
- •1 cup crumbled feta cheese
- •1 small yellow onion, finely diced
- •2 large eggs
- •1/2 tsp black pepper
- •1/4 tsp red chili flakes
- •1/3 cup olive oil
- •1 tbsp sesame seeds
- •1 tsp nigella seeds (optional)
Directions
- 1Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- 2Mix spinach, feta, onion, one egg, black pepper, and chili flakes in a bowl until combined.
- 3Lay one phyllo sheet on a clean work surface, brush lightly with olive oil; lay a second sheet directly on top and brush again.
- 4Spoon a thin line of filling along the long edge of the phyllo, then roll it up into a tight log; curl into a coil or keep straight and place on the baking sheet.
- 5Repeat with remaining phyllo and filling to make 6–8 rolls total.
- 6Beat the remaining egg with 1 tbsp water; brush over all rolls and sprinkle with sesame and nigella seeds.
- 7Bake 20–22 minutes until deeply golden and crisp; cool 5 minutes before serving.
💡 Phyllo dough is stocked in the freezer section of most Canadian grocery stores (look for Apollo or Athens brand). Nigella seeds are available at South Asian or Middle Eastern grocers; simply omit if unavailable.
