Jajecznica ze Smalem (Polish Scrambled Eggs with Lard)

Ingredients
- •2 tablespoons pork lard or butter
- •6 eggs
- •1/4 cup whole milk
- •1/2 medium onion, finely diced
- •4 slices Polish kielbasa, diced
- •2 mushrooms, sliced
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
Directions
- 1Heat the lard in a large skillet over medium heat and sauté the diced onion until softened, about 2 minutes.
- 2Add the kielbasa and mushroom slices to the skillet and cook for 3 minutes until lightly browned.
- 3Whisk together the eggs and milk in a bowl, then pour into the skillet with the meat and vegetables.
- 4Stir gently and continuously until the eggs are creamy and just set, about 3-4 minutes, seasoning with salt and pepper.
- 5Serve immediately on a warm plate with rye bread, butter, and pickled vegetables on the side.
