Ingredients

  • 2 tablespoons pork lard or butter
  • 6 eggs
  • 1/4 cup whole milk
  • 1/2 medium onion, finely diced
  • 4 slices Polish kielbasa, diced
  • 2 mushrooms, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. 1Heat the lard in a large skillet over medium heat and sauté the diced onion until softened, about 2 minutes.
  2. 2Add the kielbasa and mushroom slices to the skillet and cook for 3 minutes until lightly browned.
  3. 3Whisk together the eggs and milk in a bowl, then pour into the skillet with the meat and vegetables.
  4. 4Stir gently and continuously until the eggs are creamy and just set, about 3-4 minutes, seasoning with salt and pepper.
  5. 5Serve immediately on a warm plate with rye bread, butter, and pickled vegetables on the side.
