Jalapeño Popper Dip

Ingredients
- •250 g cream cheese, softened
- •½ cup sour cream
- •¼ cup mayonnaise
- •⅓ cup pickled jalapeños, finely chopped (reserve 2 tbsp brine)
- •1 fresh jalapeño, seeded and minced
- •½ tsp garlic powder
- •1 cup shredded sharp cheddar
- •½ cup shredded mozzarella
- •4 cooked bacon strips, crumbled
- •½ cup panko breadcrumbs
- •2 tbsp unsalted butter, melted
- •2 tbsp Parmesan, finely grated
Directions
- 1Preheat oven to 375 °F and lightly grease an 8-inch baking dish.
- 2Beat cream cheese, sour cream, mayonnaise, and reserved jalapeño brine until very smooth.
- 3Stir in pickled jalapeños, fresh jalapeño, garlic powder, cheddar, mozzarella, and half the bacon crumbles.
- 4Spread the mixture evenly into the baking dish.
- 5Toss panko with melted butter and Parmesan, then scatter evenly over the dip.
- 6Bake 20 minutes until the topping is golden and the dip is bubbling around the edges.
- 7Scatter remaining bacon over top and serve immediately with tortilla chips or crackers.
💡 Adjust heat to your crowd: use all pickled jalapeños for mild, or add a second fresh jalapeño with seeds for serious heat. The dip can be fully assembled and refrigerated overnight before baking.
