Ingredients
- •1 1/2 cups all-purpose flour
- •1/2 cup fine cornmeal
- •3 tbsp granulated sugar
- •2 tsp baking powder
- •1/2 tsp kosher salt
- •1/4 tsp ground nutmeg
- •3/4 cup whole milk
- •3 cups neutral frying oil
Directions
- 1Whisk flour, cornmeal, sugar, baking powder, salt, and nutmeg until evenly combined.
- 2Add milk gradually and knead briefly until a soft dough forms that is moist but not sticky.
- 3Divide the cornmeal dough into 12 pieces and roll each into a 4-inch tapered log.
- 4Heat frying oil to 350°F (175°C).
- 5Fry 4 cornmeal dumplings at a time for 4–5 minutes, turning often, until evenly golden and cooked through.
- 6Drain the fried cornmeal dumplings on a rack and rest 3 minutes before serving.
