Jamaican lightly sweet cornmeal dumplings fried until golden, with a crisp shell and tender, slightly dense centre for serving beside jerk or fish.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup fine cornmeal
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/4 tsp ground nutmeg
  • 3/4 cup whole milk
  • 3 cups neutral frying oil

Directions

  1. 1Whisk flour, cornmeal, sugar, baking powder, salt, and nutmeg until evenly combined.
  2. 2Add milk gradually and knead briefly until a soft dough forms that is moist but not sticky.
  3. 3Divide the cornmeal dough into 12 pieces and roll each into a 4-inch tapered log.
  4. 4Heat frying oil to 350°F (175°C).
  5. 5Fry 4 cornmeal dumplings at a time for 4–5 minutes, turning often, until evenly golden and cooked through.
  6. 6Drain the fried cornmeal dumplings on a rack and rest 3 minutes before serving.

💡 Keep the dough soft; adding extra flour until it feels dry produces a hard centre instead of the tender crumb festival should have.
