Jamaican Jerk Chicken

Smoky, spicy grilled chicken marinated in a bold blend of scotch bonnet peppers, allspice, and Caribbean spices.

Ingredients

  • 4 lbs chicken pieces (thighs and breasts)
  • 2 scotch bonnet peppers, seeded
  • 1 bunch scallions, chopped
  • 3 tbsp allspice berries
  • 2 tbsp thyme, fresh
  • 1 tbsp black pepper
  • 2 tsp cinnamon
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp vegetable oil
  • 1 tbsp ginger, minced

Directions

  1. 1Combine scotch bonnet peppers, scallions, allspice, thyme, black pepper, cinnamon, ginger, soy sauce, lime juice, and oil in a food processor and blend until smooth.
  2. 2Rub the jerk marinade all over the chicken pieces, coating evenly. Place in a large bowl, cover, and refrigerate for at least 2 hours or overnight.
  3. 3Preheat grill to medium-high heat. Remove chicken from refrigerator 20 minutes before grilling.
  4. 4Grill chicken for 25-35 minutes, turning every 8-10 minutes, until cooked through and charred at edges.
  5. 5Let rest for 5 minutes and serve hot.
