Jamaican Jerk Chicken
Smoky, spicy grilled chicken marinated in a bold blend of scotch bonnet peppers, allspice, and Caribbean spices.

Ingredients
- •4 lbs chicken pieces (thighs and breasts)
- •2 scotch bonnet peppers, seeded
- •1 bunch scallions, chopped
- •3 tbsp allspice berries
- •2 tbsp thyme, fresh
- •1 tbsp black pepper
- •2 tsp cinnamon
- •3 tbsp soy sauce
- •2 tbsp lime juice
- •2 tbsp vegetable oil
- •1 tbsp ginger, minced
Directions
- 1Combine scotch bonnet peppers, scallions, allspice, thyme, black pepper, cinnamon, ginger, soy sauce, lime juice, and oil in a food processor and blend until smooth.
- 2Rub the jerk marinade all over the chicken pieces, coating evenly. Place in a large bowl, cover, and refrigerate for at least 2 hours or overnight.
- 3Preheat grill to medium-high heat. Remove chicken from refrigerator 20 minutes before grilling.
- 4Grill chicken for 25-35 minutes, turning every 8-10 minutes, until cooked through and charred at edges.
- 5Let rest for 5 minutes and serve hot.
